Manuka Honey Cranberry Pecan Pie


2 cups fresh frozen cranberries

1 cup orange juice

½ cup Manuka Honey

2 tsp cornstarch

2 tsp cold water

½ tsp orange extract

Pecan Topping:

1/2 cup Manuka honey

3 tsp butter

1¾ cup pecan halves

1 baked 9-inch pie shell



Combine first 3 ingredients in saucepan.

Cook over low heat for 15-20 min.

Allow to cool.

Puree cranberry mix in blender and return to saucepan.

Combine cornstarch and water.

Bring cranberry puree to the boil.

Add cornstarch/water mix until it thickens.

Stir in orange extract.

Allow to cool and pour into pie shell.
