Recommended Usage

You can enjoy the unique flavour of UMF® Manuka Honey as an eating experience by itself straight from the spoon or you can spread it generously on to bread or toast as a tasty snack.  Should you wish to use honey on breakfast cereals or porridge, then use just ordinary Manuka Honey without a UMF® rating.  UMF® Manuka Honey should never be mixed with liquids, either hot or cold, as heat destroys many of this special honey's qualities and the honey gets too diluted and is therefore less effective.

For relief from problems of the digestive system, such as indigestion, stomach upsets, gastric reflux, vomiting, diarrhoea, gastritis, stomach ulcers, H-Pylori., etc. the recommended daily dose is one to three teaspoons of UMF®15 per day, depending on severity of the digestive problem.  

Put one teaspoon of UMF®15 on to a small piece of bread/biscuit one to three times a day, with no food or drink 20 minutes either side of taking the honey.   Never mix this special honey into food or drink, as heat destroys many of the honey's properties and liquid dilutes the honey too much, thus making it less effective.

When stored correctly, UMF® Manuka Honey, will last for several years. It has no real expiry date. Should any natural crystallisation occur, this can be corrected by warming slightly.

Honey and honey products must not be given to children under the age of 18 months. Should there be a need to consume Manuka Honey during pregnancy, then it is essential to consult a doctor or medical practitioner before use. People with diabetes should check the suitability of manuka honey with their doctor or specialist.

Not all Manuka Honey has UMF™.  The minimum qualification for using the name UMF™ and to be suitable for therapeutic use is a UMF™10 rating.

Manuka Honey is derived from the nectar of certain Leptospermum plants but not all Manuka Honey contains the special UMF® qualities

What is the difference between the UMF® ratings?

Immediately after the letters UMF on a package of Manuka honey will be a number. This number increases up to 20 and sometimes beyond.


The UMF number is a standard way of describing the UMF® strength of the product. The honey is put in a plate with a bacterial culture and the area is measured where the bacterial growth is stopped. This area is compared to a similar area produced by a solution of phenol and water. The number refers to the percentage of phenol in the water. So UMF®10 is honey that has the same bacteria-killing power as 10% phenol.

In the same way that sunscreen provides higher levels of protection when the SPF value increases, a higher UMF® rating indicates a stronger strength of the Manuka Honey.  Therefore, a ‘UMF® 20+ Manuka Honey’ will contain a higher level of guaranteed UMF® Manuka Honey than a UMF®10.

There are 4 UMF® ratings to indicate the potency of Manuka Honey:

  • UMF® 5 to UMF® 9 - maintenance level only (not recommended for therapeutic uses).
  • UMF® 10 to UMF® 15 - useful therapeutic levels endorsed by the Honey Research Unit at The University of Waikato.
  • UMF® 15+ and above - superior strength.
  • UMF® 20+ - superior strength.
